Indian Chicken Spinach & Squash

We had a surprisingly yummy meal last night, and I say surprisingly because it was so easy!  When we get towards the end of the week we loose a little motivation for creativity in the kitchen and we look to the frozen veggies in the freezer to provide a "break from chopping".  SO last night it was chicken breast sauteed with frozen organic spinach and frozen organic butternut squash.  We added Jalfrezi Sauce to this (an Indian coconut/tomato/spices type sauce) and it was delicious.  Your meals don't have to be planned out and involved tons of chopping and preparing in order for them to be healthy, nutritious and yummy...but you do have to buy the right things at the grocery store!

Having things like Jalfrezi (by Seeds of Change), a mixture of organic frozen veggies, even green chili, salsa, chopped olives, organic canned beans of any kind really...you can pull together some pretty good meals without even trying.  

Indian Chicken Spinach & Squash
2 organic chicken breasts
1 bag organic frozen chopped spinach
1 bag organic frozen chopped butternut squash
1/2 jar of Jalfrezi (this is in the ethnic section of the store, with the mexican, asian, and indian foods)
Olive oil to sautee with (or even coconut oil would have been good)

Preheat your skillet with 1-2 tbsp olive oil over medium heat.  Slice your raw chicken into bite size pieces.  Saute chicken for about 5-7 minutes before adding your bags of veggies.  Continue to saute until chicken looks cooked through, and add Jalfrezi last.  Mix well and serve!  Maybe some chopped cilantro on top and salt & pepper.
